Soft daylight falls across soapstone counters, ivory cabinets and worn pine floors in a restored home's kitchen, with a mature oak visible through the sash window.

Cambridge's Packing House Keeps Business Hours. Here Is When the Public Gets In

"Guests can plan to stop in at 411 Dorchester Avenue in Cambridge, preferably from the Dorchester Avenue (street side) door for easier access." That line from the Dorchester Chamber's August 6, 2026 announcement is the most useful sentence written about The Packing House this year. It tells you which door to use. It also shows that the restored factory on Dorchester Avenue is not set up like a food hall or a market where you can wander in. For most of the week it is a working building. If you live in Cambridge, the best way to use it is to know the few hours and dates when it opens to the public.

A Factory That Still Goes to Work

The building went up in 1920 for the Cambridge Furniture Company and later became Factory F of Phillips Packing Company. It is the last Phillips factory building still standing. At its height, Phillips was one of the largest canning operations in the world, and it gave Cambridge a name for tomatoes, vegetables, and seafood. The company supplied K and C rations to U.S. troops during World War II and closed in the 1960s. Cross Street Partners led the reuse project with the Eastern Shore Land Conservancy. Phase I started in 2021 and finished in 2023. Cross Street lists delivery of the whole project in 2024.

The 60,000 square feet were then filled mainly with workspace. MERGE runs the coworking floor. Day passes and part-time memberships cover 8 a.m. to 5 p.m. on weekdays, and community access runs 7 a.m. to 7 p.m. Maryland DHCD runs its Cambridge Community Engagement Center here. Blue Oyster Environmental, an oyster-farming and fishery-restoration company, also works out of the building. The property's own tenant list includes Shore Community Power, Invenergy, Moving Dorchester Forward, the John & Janice Wyatt Foundation, Amana Healthcare, The Skin Route, and about a dozen other names. The site is still advertising food, office, and retail space for lease.

None of those tenants is a shop you can browse on a Saturday. That is why the lunch counter that opened in late summer matters so much.

Lunch, Thursday and Friday Only

Bayside Bistro started serving lunch on Thursdays and Fridays, noon to 3 p.m., beginning August 20. The Chamber lists Ashley Blake as owner and Aaron Powley as co-owner. Dorchester County's tourism listing calls him Chef Aaron, a Hoopers Island native and former waterman. According to that listing, he went on to cook at The Inn at Little Washington, L'Auberge, and Glen Gordon Manor. The kitchen blends Eastern Shore flavors with French tradition.

The setup is modest. The Chamber said a few tables would go in the foyer, but most of the business is expected to be carryout. The tourism listing offers dine-in, carryout, and DoorDash. It points diners to the bistro's Facebook page for each week's specials and for ordering ahead. The county's listing photo, dated September 2026, shows a French onion soup.

The bistro has said it wants more than two days a week. The Chamber announcement ends with "Looking forward to growing in Cambridge, look for more in the future." The tourism listing describes plans for a separate brick-and-mortar restaurant down the line. No location or timeline has been published. For now, lunch at 411 Dorchester Avenue is the only way to try the food on a regular schedule.

The Thursday Pairing, Through October

Bayside Bistro grew out of HoneyDew Homestead. HoneyDew's contact page places the bistro inside Four Eleven Kitchen at The Packing House and lists its own farm stand on East Appleby Avenue. HoneyDew's events page also lists the Cambridge Farmers Market every Thursday at Long Wharf Park, 3 to 6 p.m., for the April to October 2026 season.

That makes Thursday the easiest day to connect with this business. Pick up lunch on Dorchester Avenue before 3, and the market at Long Wharf opens as the lunch window closes. HoneyDew's posted season ends in October. As of today, October 4, only a few Thursdays like that are left this year.

The bistro also runs one-off events. A ticketed Tea & Tapas lunch on March 7, 2026 served seven courses paired with teas from Doehern Tea Company of Oxford, and it sold out. HoneyDew's site still calls a bakery and café "coming soon." That wording dates from before the lunch service opened, so the Chamber announcement and the county listing give a better picture of current hours.

The Kitchen Behind the Counter

The bistro works out of Four Eleven Kitchen, a shared commercial kitchen and incubator for food entrepreneurs. It opened in the building on September 12, 2024. In an April 2025 interview with the Cambridge Spy, founder Amanda Kidd said the kitchen had six member clients.

That count may not hold anymore. On April 10, 2026, Kidd wrote to Four Eleven's community that she had helped secure more than $2.4 million in funding for the kitchen's development. She also wrote that since January, "due to changes in kitchen scheduling," the organization's access to its primary commercial kitchen had been limited. That has made rentals, classes, and programs less regular than before. In the same letter she said the group is "actively working to rebuild."

For someone thinking about a cooking class or a food pop-up here, this matters. Check Four Eleven's own channels for its current schedule instead of relying on older listings. It also explains why the lunch window is narrow. The food side of The Packing House is still small, and it shares space and time with other tenants.

The Dates Worth Writing Down

Outside the Thursday and Friday lunch hours, the building opens to the public mainly for scheduled events. Here is what is posted as of early October 2026.

What When Details
Bayside Bistro lunch Thursdays and Fridays, noon to 3 p.m. Mostly carryout, a few foyer tables, street-side door
Cambridge Farmers Market, with HoneyDew Homestead Thursdays, 3 to 6 p.m., through October 2026 Long Wharf Park
2nd Annual Holly Days Artisan Market Saturday, November 28, 2026, 10 a.m. to 5 p.m. Free admission and free parking
Explore the Shore Saturday, March 20, 2027, 10 a.m. to 3 p.m. Listed on The Packing House events page

Holly Days is the biggest public date on the building's calendar. The first one ran November 29, 2025. This year's market promises "dozens of vendor booths" from artisans, makers, and specialty food producers, plus seasonal food and drinks inside the restored building. Vendor applications were still open when the page was captured, so the final lineup isn't set. It falls the Saturday after Thanksgiving, so it's a good stop for guests who are staying through the weekend.

Explore the Shore is an outdoor-themed expo. The 2026 edition, held February 21, brought outdoor vendors, demonstrations, workshops, music, and food. The next one is posted for March 20, 2027, about a month later in the season than this year's.

Other events come up through the year. The building hosted a free Eastern Shore garden club flower show on June 18, 2026. Earlier, on October 3, 2025, it held a reception for the Chesapeake Gateways designation. The building's events page is the most reliable place to find these.

Renting the Room Yourself

You can also book the space for your own event. The Atrium holds up to 530 people standing or 250 at banquet tables. The smaller MERGE Lounge holds up to 100. That size works for a rehearsal dinner, a nonprofit fundraiser, or a milestone birthday that needs more room than a restaurant's private dining area, in a hall where Phillips once canned the county's tomatoes.

Historic buildings like The Packing House are part of what gives Cambridge its character, and that character carries into the in-town homes and waterfront properties nearby.
